Ingredients

Italian Herb Rub
1 tbsp dried Oregano
1 tbsp dried Thyme
1 tbsp dried Rosemary
1 tbsp dried Parsley
1 tbsp Garlic Salt
1 tsp dried Chili flakes

Marry Me Sauce
1 tbsp Olive oil
1 tsp Salt
1 tsp Black pepper
1 cup heavy Cream
½ cup Parmesan Cheese
1 jar Black Truffle Pomodoro

Cannelloni Filling
1 whole Chicken, smoked and shredded
375g Ricotta Cheese
4 Garlic cloves, finely chopped
1 Onion, finely diced
1 cup Spinach
½ cup semi-dried Tomatoes

Other Ingredients
8 fresh Lasagna sheets, each sheet cut in thirds
½ cup Mozerella Cheese

Method

    Prepare the Chicken

    Remove the chicken from its packaging, rinse under water, and pat it dry with paper towels.

    Place the chicken breast side down on a clean cutting board.

    Use kitchen shears or a sharp knife to cut along one side of the backbone from the tail end to the neck.

    Repeat on the other side of the backbone and remove it completely.

    Flip the chicken over, breast-side up, and press down on the breastbone to flatten the chicken. This will help it cook evenly.

      Season the Chicken

      In a small bowl, combine all the Italian dry rub ingredients - dried Oregano, Thyme, Rosemary, Parsley, Garlic Salt, and Chili flakes.

      Drizzle olive oil over both sides of the spatchcocked chicken to help the rub adhere.

      Sprinkle the dry rub generously all over the chicken, ensuring it's evenly coated. Make sure to get the rub under the skin for extra flavour.

        Smoked the Chicken

        Place the seasoned spatchcocked chicken on the smoker grate, skin-side up.
        Maintain a consistent temperature of 225°F (107°C) throughout the smoking process.

        Smoke the chicken for about 45 minutes to 1.5 hours (depending on the size of the chicken), or until the internal temperature of the thickest part of the breast reaches 165°F (74°C) and the thighs reach 175°F (80°C).

          Prepare the Marry Me Sauce

          In a saucepan, heat the olive oil over medium heat.

          Pour the entire jar of Black Truffle Pomodoro sauce into the saucepan.

          Add the salt and black pepper to the sauce, stirring well to combine. Reduce the heat to low and let the sauce simmer gently for about 5-7 minutes. This allows the flavours to meld together.

          Pour the heavy cream into the sauce, stirring continuously to incorporate it evenly.
          Gradually add the grated Parmesan cheese to the sauce while stirring. Continue to stir until the cheese is completely melted and the sauce becomes smooth and creamy. This should take about 3-4 minutes. Taste the sauce and adjust the seasoning if necessary by adding more salt and black pepper to suit your taste.

          If you want your sauce to be a bit thicker, you can let it simmer for an additional 2-3 minutes, but be sure to stir constantly to prevent scorching.

            Make Cannelloni Filling

            Once the chicken has reached its internal temperature of 165°F (74°C) allow it to fully cool, then shred it into small, bite-sized pieces. Remove any bones or skin as needed.

            In a large skillet or frying pan, heat the olive oil over medium heat and add the finely diced onion and chopped garlic to the skillet. Sauté until the onion becomes translucent and the garlic is fragrant, usually 2-3 minutes then add the fresh spinach to the skillet. Stir and cook for a few minutes until the spinach wilts and combines with the other ingredients.

            Add the shredded smoked chicken to the skillet with the sautéed onion and garlic. Stir to combine and let it cook for a few minutes to infuse the chicken with the onion and garlic flavours.

            Transfer the chicken and spinach mixture to a large mixing bowl. Add the ricotta cheese and chopped semi-dried tomatoes to the bowl. Mix everything together until well combined.

            Taste the filling mixture and season with salt and black pepper to your preference. Adjust the seasoning as needed.

              Fill and roll Cannelloni Tubes

              Using a spoon, carefully stuff each cannelloni lasagna sheet with the prepared filling mixture. Be gentle when rolling the lasagna sheet.

              Add rolled cannelloni to a skillet and pour the Marry Me Sauce over the top.

              Top the Marry Me Cannelloni with mozzarella chunks and a generous amount of grated parmesan cheese.

                Smoke Marry Me Cannelloni

                Place the skillet on the smoker grate and smoke for 30-45 minutes.

                Once the cheese has completely melted and the Marry Me Cannelloni is probing soft, remove the skillet from the smoker grate and allow to cool for 10 minutes.
