Despite testing various wired cooking thermometers, one issue remained unchanged: we had to physically walk over to the thermometer to monitor the meat's progress.

I have several sticks I use during my smoke. Especially Brisket. When I wrap it for the last hour or so it will stay contained inside the wrap and I know the Temp is perfect!
